If a family member you hardly knew, for reasons unknown to you, left you his entire inheritance, over his own children, what do you do?

The circumstances around why hewould do such a thing are the deciding factors. I believe it is always best to honour a deceased persons wishes and that is what a will is. So unless there was some reason that could outweigh the death request of his will, then I would honour his will and not share anything with his kids.
A father does not make such a decision lightly so I can not fathom why he would do such a thing, but if he went to the trouble of making a will expressing those wishes then they aught to be honoured.
If any of his children cold gveme a justifiable reason that might sway me otherwise I would not give them anything of his that he did not wish then to have. You must remember that what he had was his not theirs and so he can dispose of his belongings as he sees fit.
