I don't have one that's really specific, but I personally like to use a rose. When I think of sangria I think of the summer and when I think of summer I think of rose. I add the following fruits depending on availability and freshness:

Peaches
Apricots
Raspberries
Strawberries
Orange slices (blood oranges are very nice)

I let the dink "steep" in the refrigerator for at least 2 hours. Right before service I add some sparkling water.
