I know that red wine should be served at room-temperature, white wine, rosé and beer should be chilled. Are there exceptions to these 'rules

Red dessert type wines can and should be chilled. Things like a Sangria, which is really a wine mix, is not so good if it's not chilled, and sometimes it's even served with ice. Some use Cab Sav with Sangria, and I've even had it with Merlot, but it's ALWAYS been chilled.

I'd also had some dry white wines served in fancy establishments and they served it at room temperature.

While I'm not certain of the exact etiquette, it would seem that sweeter wines are usually served chilled and drier wines are served room temperature.

Wine should never be served at room temperature-- unless you keep your room very cool. red wines should be served between 54 and 64 degrees F, depending on their variety. A Beaujolais should be served at the lower end of the range, while a Bordeaux would be best about 64. Since most wine cellars kept wine at 55, the Beaujolais would have to be chilled to bring it up down to a good temperature, while the Bordeaux would need to sit at room temperature for about 20 minutes. Good serving temperatures for whites, range from 41 to 52, again depending on the variety.
