Conundrum Next Conundrum

I'm cooking Chicken Marsala for a dinner party this weekend, what is the best wine pairing?

One of the things that makes a great Chicken Marsala is the wine used in the recipe.

Here is (basically) how I'm going to make it:

However, I've had A LOT of trouble in the past finding both an adequate cooking wine and a wine to pair with it after.

Can anyone help me out?

Do NOT use cooking wine. Ever. You should use a dry Marsala wine that you would be willing to drink on its own. For more help with Chicken Marsala, check out this link: http://www.mahalo.com/how-to-make-chicken-marsala

In terms of white to drink with Chicken Marsala, it depends on your taste. I personally would probably use a Pinot Noir, as it will not be overpowered by the Marsala sauce.

For cooking, use Marsala wine.

As it's an Italian dish, pair it with an Italian wine -- try a fruity red such as Montepulciano d'Abruzzo or a good Chianti. If you prefer white wine, try a Frascati.
