Thanksgiving is great for non-vegetarians! Turkey's out, of course (unless you want to go the tofurkey route; I advise against it but some people like that sort of thing), but you have stuffing, cranberry sauce, roasted squash or sweet potatoes, cornbread, rolls, pumpkin pie...
Personally, I like the squash; it's my favorite. All you need to do is dice it, maybe add some apples, and add pumpkin pie seasoning, and it's great.

It's yummy, juicy, tasty and ready to eat in less than an hour (not including defrost time). Served next to your regular meat dishes your vegetarian guest will have a nice protein source that will go with everything else you've prepared for your other guests. Assuming you have a gravy that isn't meat based too.
