What is the proper way to word an invitation to a dinner that each guest will be expected to pay for?

If you expect all those gathering to pay for their own meal, then it is no longer technically an invitation.
What you would need to send out is what is known as an announcement of a social gathering.
To emphasize and clarify the point that each person will have to pay for their own consumption, you should title the event a "Dutch Treat Dinner Gathering at XYZ Restaurant"
Please keep in mind that at gatherings there is technically no host or hostess, neither are there guests. All present would be termed as participants or invitees, so do not use the label host/hostess or guests anywhere on the announcement. At most you may identify yourself as the organizer.
