What types of wines are good to use for cooking?

The recipe I have in mind is a beef stew which calls for red wine. I've been using red wine before in a similar recipe and the end result was not very good, but I don't remember what I used. Are there are any types of wine that are better than others for this? Anything I should keep in mind when using wine for cooking? While I'm planning for a specific meal, I'd also like some suggestions for white wines that works well for chicken dishes.

The general rule for using wine for cooking is that you use a wine that you would like to drink. so after you done you cooking you don't need to open another bottle.

The truth is that nasty wine will give you a nasty sauce. It is important that you choose a wine that is just as good as any that you would be happy to put in a glass and drink at the table.
This doesn't mean cooking with something rare and expensive, it simply means that you should never cook with a wine you are not prepared to drink.
It goes with the saying 'what you get out is only as good as what you put in'.
