I am a big white wine fan.... I generally serve Chenin blanc from Sula Vineyards or a Brut. Brut from Sula has floral aromas. It's bubbly and crisp .... made in true champenoise style
Asker's Rating:
• Champagne would be too obvious a choice... and also has a lot of baggage/connections with it. So something a bit different would be fun.

Champagne or other sparkling wine are a good option to serve before dinner. Not too overpowering or taste specific. Relaxing your guests and creating an appetite are your main goals when serving an aperitif.

Champagne or other sparkling wines or a light-bodied white wine is great. Rose wine and Sherry are also very good.

I am a big red wine person so my suggestion to you would be try a lighter red wine; though not heavy like the ones you would typically have with stake- aside from the many different pronunciations you could not go wrong if you only follow this obsolete rule to wine: (“red wine, red meat; white wine, white meat”).
