Probably because it's cheaper than bottled wine... and all the rituals that surround the culture of wine—like uncorking, decanting, pouring, labeling—are eschewed in favor of this bulky, cheap, packaging.
Boxed wine is actually not necessarily inferior to bottled wine. Especially in recent years, when a lot of eco-friendly, trendy brands have sprung up. Also, boxed wines last around 4 weeks after they are opened, whereas bottled wine only lasts a day or so... Because drinking wine is as much about experience and image as the taste to many people. Box wine may taste as good as wine from a bottle, but it's not the same experience, just like the same food can taste better in a nice restaurant with a pleasing atmosphere than when you just ask for it to go. It's also not as elegant to serve as a bottle of wine. That being said, box wine is stored in airtight containers and the wine will last for a long time, so there should not be a big difference in quality or taste.
