Conundrum Next Conundrum
What would you do if you observed a person in front of you intentionally adding the wrong quantity for fruit at the self-check out?
This would make his total due less... Would you notify a nearby cashier or person working at the store or ignore the incident?

Depends on how egregious it is. After all, there's always the possibility that they just made a mistake, and calling the cashier over and getting them to make a big fuss when the person is totally innocent would be embarrassing all around. I'm talking about making a "typo," leaving off a zero, pressing the wrong type of apple, say, by accident.
But if the person is doing something like entering in 1 instead of 25, then yeah, I'm going to tell the cashier. That isn't a mistake. You can't make a mistake like that. And it'll be highly costly for the store.

I actually have experienced this on a few occasions. At least, I thought I have. I brought myself to say anything because my eyesight is not exactly 20/20 and it could be a malfunctioning scale, or the person could have simply made a mistake.
In contrast, I do remember another instance at a home improvement store where I clearly saw two young men loading lumber and cement bags from the exterior depot. They were clearly stealing and I, or rather my father to be more precise, did go into the main store and report it to the security guard.
In the end, I suppose it's partly a matter of scale and also clarity in the malicious intent.
