I would not, because I believe in every person's right to choose to live their beliefs.
While the parent of an un-vacc'd child has made a choice, so too must I, and since I believe that the 'herd immunity' which protects our children, our elderly, and our very young is fading due to the current (and unsubstantiated) vaccine scare , and that this has serious far reaching consequences, I could not in good faith choose to care for that child.
I would feel it unjust of me to NOT encourage the parent to seek out a daycare that shares their beliefs in child-rearing and most especially on medical treatment.

It may be dangerous for the un-vaccinated child to be around all the vaccinated children... This should be a consideration for the parent. There are Homeopathic Vaccinations that are available to this mama if she would like to protect her children from all the vaccinated children.
