I would have thought it's down to our ability to empathise.
We recognise facial expressions, voice tone changes and other signs in people that we remember from ourselves and we relate those outward expressions with our emotions at the time we expressed the same outwardly.
I've just read that back and it's a bit of a mental sentence, I hope it makes sense? :s

I agree that sensing motives and feelings is a natural talent, this is how I do it:
> Ask good open questions (How, why, what, when, etc)
> Understand body language
> Confirm your expectations (Walkthrough what you've agreed and reconfirm)
