My son has to write an essay on who his hero is. Should I talk him out of writing about his mom - aka my ex-wife?

No. If that's who he chooses, then that's who he needs to write about. His hero selection may give his teacher an indication about what his mental process is like, what his values are, and what his family life is like.
Plus, even if his hero worship is falsely placed, let him have his nice visions of his mother. If she's really not hero-worthy, he'll find it out soon enough in life. Let him have his nice thoughts for now. Sometimes ignorance is bliss.

No... don't stop him If thats who he wants to write about let him write. At the very least he'll be able to get a good grade, and you'll be able to see what he's thinking inside. Don't judge him for it though. It sounds like you've both been through a lot and keeping communication lines open is a good thing.
On the other hand its not impossible that he's doing this to wind you up... or at least test you to see if you react strongly. Call his bluff and let him write the essay. Its not a big deal, especially if you don't make it one.
