Is it OK to take religious holidays off from work if you're not religious and won't use the day off to observe the holiday?

I think it depends on whether or not your coworkers take the day off (whether they observe the holiday or not). If you are the only non-Jew in a work force of 20, taking Rosh Hashanah off is probably fine. However, if absolutely no one is Jewish where you work (including you) and you INSIST on taking off Rosh Hashanah, that may be looked at a little differently. I think "OK" is defined as what your boss and coworkers are willing to accept.
